Bouillabaisse
cook 4 leeks 1 large fennel bulb, 1 garlic clove in oil till soft add 8 cups of stock bottle of passata simmer for 20 minutes. season add 2 kilos mussels 1/2 kilo fish fillets for 10 minutes
